Cheesecake Cookie Ice Cream Squares

Anyone who knows me knows that I love all things to do with food, including cooking, which I refer to as creating a piece of art. I’m not a fan of making food in a hurry or just for sustenance. Food is such a huge part of life; food embodies different cultures, passion and invigorates all of your senses.

So, over the weekend I thought I would create a sweet treat for my family. Although it didn’t look Pinterest worthy, I guarantee it was a hit and will blow your tastes buds away! Cheesecake Cookie Ice Cream Squares, it was really simple and contains only 6 ingredients:

  • ½ cup of sugar
  • 1 tsp of vanilla extract
  • 1 egg
  • 1 container of Philadelphia cream cheese
  • 1 tub of President’s Choice vanilla ice cream
  • 1 roll of President’s Choice cookie dough

Simply place the cookie dough in the glass pan and pat it down until there is a ¼ inch thick layer along the bottom.

Then whisk the cream cheese in a bowl until it is nice and fluffy.

Add the sugar and whisk it with the cream cheese, making sure that everything is blended well.

The next step is to add the egg and vanilla extract to the mixture, ensuring that you achieve a smooth texture.

Now pour the mixture on top of the cookie dough.

To make this even sweeter, add cookie dough chunks on top of the mixture. (You now have permission to eat the leftover cookie dough!)

Bake at 350˚C for 30 minutes

Once you remove it from the oven, let it cool down completely before adding a layer of vanilla ice cream on top.

Cover the top with foil and place it in the freezer for 4 hours.

The last step is to cut it into squares and enjoy the mouth-watering goodness.
