Creamy Avocado Chicken Salad

Time to switch it up Toronto! Time to be healthy and that doesn’t mean it can’t be delicious! I know we have busy lives and it’s easier to grab something to go or eat out, but this will not take long at all, PROMISE!

This is a simple recipe that can be made easily and maintains its nutritional value even when served as leftovers, because we aren’t going to reheat this!

Creamy Avocado Chicken Salad

Ingredients:

  1. Salt
  2. Pepper
  3. A Lime
  4. Garlic powder (optional)
  5. Greek Yogurt
  6. Cilantro
  7. Chicken
  8. Avocado

All you have to do is boil and shred the chicken (I hate this part because it’s tedious).

Then add the salt, pepper and garlic powder and mix it all together.

Squeeze half a lime in.

Add the avocado and mix it into the shredded chicken till the avocado is fully mashed up.

Don’t forget the Cilantro! Mix that well into the bowl with the rest of the ingredients.

Add some Greek yogurt (I prefer PC branded due to the consistency).

If you would like it to be slightly spicy, add chili flakes.

It’s that simple! You can have it with a side of quinoa, eat it as a sandwich with pita bread or just by itself. When you have it the next day, do not heat it up.
