Breakfast Time!

No time to eat breakfast? Always on the go? Sounds like you’re living the typical Torontonian life.

Here are some awesome breakfast ideas which are simple and delicious:

  1. Avocado Toast

Diced avocado with olive oil, salt, black pepper and chili flakes on multigrain toast, with a fried egg on top.

2. Coconut Chia Seed Pudding

All you need to do is pour coconut milk and coconut flakes into a container or bowl and add chia seeds. Let it sit overnight in the fridge and its ready to enjoy in the morning. I love topping it with sliced bananas and walnuts. You can literally make this however you like!

  1. Spinach, Broccoli & Cheddar Mini Quiches

Bake it a day before in cupcake trays with all the ingredients mixed together in each slot and refrigerate them.

  1. Parfait

Add some honey at the bottom, cut up some fruit, add walnuts, chia seeds and vanilla yogurt. Repeat for two layers!

  1. Smoothie

Pick your favorite fruits and add some milk.

  1. Toast With Almond Butter

This is a great alternative to peanut butter and is very healthy.

  1. Spinach Waffles

All you need is a waffle maker and these ingredients: egg, Greek yogurt, oats and spinach. Blend it all together, pour it into the waffle maker and enjoy!

  1. Bell Pepper Egg-In-A-Hole

Slice the bell peppers into rings and remove the seeds. Let them sit in the frying pan for a minute with olive oil, then add the egg and cheddar cheese on top. Let it cook to your liking.

  1. Avocado Egg Salad

Skip the mayo, all you need is boiled eggs chopped up, some dill, lime juice, avocados (of course!), green onion, sour cream and yogurt. Mix it all together and add some pepper and salt. This can be eaten alone or in a sandwich.

  1. Breakfast casserole

Make this a day before and eat it over a few days! Add ground beef and onions and cook them in a pan, then add broccoli, cheddar and mozzarella cheese. Pour the egg, cream and black pepper mixture on top, then add some more ground beef to the top and more egg. Bake it for 40 minutes uncovered.

These are some ideas which are easy to prepare and won’t take too much of your time. Leave a comment and let me know any other breakfast ideas or hacks you have come up with. Let’s share our recipes, Toronto!
